Meal prep is the act of preparing some or all of your meals ahead of time, usually for the whole week. This can involve cooking entire meals in advance or simply chopping vegetables and portioning out ingredients. The goal is to make healthy eating easier during your busier days.

Recipe development is the process of creating a recipe from an idea, typically for use in cookbooks, restaurant menus, or food businesses. It involves a creative and iterative process of exploring techniques, ingredients, and flavor profiles to create delicious, visually appealing, and easy-to-follow dishes.

Challenge Butter

In our conversation for the podcast, Melissa discusses her favorite meals to prepare and how her children have learned a few culinary tricks themselves. Especially with corn on the cob.  As part of my contribution to the conversation, I share with Melissa my family’s favorite recipes for Father’s Day.  This year, my sister and I prepared all my dad’s favorite meal items for his special day.  Tracy made Bruschetta and a Beet salad.  She also brought Beluga Caviar and crackers for fun.  I made BBQ Chicken halves using a Santa Maria-style seasoning blend (salt, pepper, parsley, and garlic salt) with drawn butter and beer.  A pinch of Thyme is our official Bogue Family Secret Ingredient, adding the final touch.

Basting and turning the chicken every ten minutes is also crucial for browning the skin and achieving the proper crispness while retaining the moisture inside.  Challenge Butter was on my list of ingredients for this ultra-special meal, along with the use of my dad’s built-in BBQ pit.  He was kind enough to share it with me for the afternoon.  One may never get in the way of a man and his BBQ pit.  A pit in our neck of the woods is a status symbol like a 4X4 truck or a belt buckle.

Santa Maria Style is a way of life on California’s Central Coast.  It is defined by the red oak we use, the open pit, the long burn time to smolder the wood for optimum temperature, the right ingredients, and a good cut of meat served alongside great friends with a good bottle of wine.
